Oil unsaturation refers to the degree to which fatty acids in an oil contain carbon-carbon double bonds (C=C). The iodine value (IV) is the standard measure: IV = grams of iodine absorbed per 100 g of oil. Higher IV = more unsaturated. The degree of unsaturation (DoU) for individual fatty acids is calculated as: DoU = (2C + 2 − H)/2. More double bonds lower the melting point (polyunsaturated oils are liquid at room temperature), reduce oxidative stability (increasing rancidity risk), and improve cardiovascular health profiles (omega-3 and omega-6 fatty acids).

Iodine Value (IV)

IV = grams I₂ absorbed per 100 g fat; each C=C double bond absorbs 1 mol I₂. Saturated fats (coconut oil, butter): IV < 20. Olive oil (mainly monounsaturated): IV ≈ 75–90. Sunflower oil: IV ≈ 120–145. Linseed oil: IV ≈ 170–204 (very high — 'drying oil').

Degree of Unsaturation (DoU)

DoU = (2C + 2 − H) / 2 (for CₙHₘ fatty acids; O does not affect DoU). Each double bond = 1 DoU; each ring = 1 DoU. Oleic acid (C₁₈H₃₄O₂): DoU = (36+2−34)/2 = 2 (COOH double bond + 1 C=C). Linoleic (C₁₈H₃₂O₂): DoU = (36+2−32)/2 = 3 (COOH + 2 C=C).

Effect on Melting Point

C18:0 (stearic, saturated): 69.6°C (solid). C18:1 (oleic, 1 double bond): 13.4°C (liquid). C18:2 (linoleic, 2 double bonds): −5°C (liquid in fridge).

Health

Omega-3 (ALA, EPA, DHA) and omega-6 (LA, AA) PUFAs are essential; reduce cardiovascular risk. Trans fats (partial hydrogenation): increase LDL, decrease HDL; banned in US food supply.

Typical values: coconut oil (mainly saturated) IV ≈ 7–12; olive oil (mainly oleic acid) ≈ 75–90; sunflower oil (linoleic-rich) ≈ 120–145; linseed oil (ALA-rich) ≈ 170–200. Drying oils (IV > 130) polymerize in air — used in paints and varnishes.

Cis double bonds create kinks in fatty acid chains, preventing close molecular packing, reducing van der Waals interactions and lowering the melting point. All C18: Stearic (0 double bonds) melts at 69.6°C — solid. Oleic (1 double bond) melts at 13.4°C — liquid. Linoleic (2 double bonds) melts at −5°C. Alpha-linolenic (3 double bonds) melts at −11°C. This explains why animal fats (saturated) are solid and most plant oils (unsaturated) are liquid. Tropical exceptions (coconut, palm kernel) are plant oils that are solid because they are unusually high in saturated fatty acids.

DoU = (2C + 2 − H)/2 for a fatty acid CₙHₘO₂ (oxygen atoms do not affect DoU). Each DoU = one ring or one double bond. The carboxyl group (C=O) of the fatty acid contributes 1 DoU. Examples: Palmitic acid C₁₆H₃₂O₂: DoU = (32+2−32)/2 = 1. That 1 DoU = the COOH double bond. Oleic acid C₁₈H₃₄O₂: DoU = (36+2−34)/2 = 2. The 2 DoU = COOH + 1 C=C. Linoleic C₁₈H₃₂O₂: DoU = (36+2−32)/2 = 3. Three DoU = COOH + 2 C=C. Each additional C=C double bond reduces the molecular formula H count by 2 and adds 1 DoU.

Saturated fatty acids (SFAs, no C=C): solid at room temperature; increase LDL cholesterol; found in butter, lard, coconut oil, full-fat dairy. Monounsaturated (MUFAs, 1 C=C): oleic acid; neutral-to-positive for LDL; found in olive oil, avocado, almonds. Polyunsaturated (PUFAs, ≥2 C=C): lower LDL.
