What Is Mass Percent?
Mass percent (also written as % w/w or weight percent) is the ratio of the mass of a component to the total mass of the mixture or solution, multiplied by 100:
Mass percent = (mass of component / total mass of mixture) × 100%
For a solution specifically:
Mass percent = (mass of solute / (mass of solute + mass of solvent)) × 100%
The result is dimensionless and expressed as a percentage. It is independent of temperature — unlike molarity, which changes with temperature due to volume expansion or contraction.
Worked Examples
Example 1: Saline Solution
Physiological saline is 0.9% NaCl by mass. To prepare 500 g of this solution:
Mass of NaCl = 0.9 / 100 × 500 g = 4.5 g NaCl
Mass of water = 500 − 4.5 = 495.5 g water
Example 2: Sulfuric Acid
Concentrated sulfuric acid is ~96% H₂SO₄ by mass. In 100 g of this reagent: 96 g is H₂SO₄ and 4 g is water. Knowing mass percent and density (1.84 g/mL), molarity can be calculated:
Molarity = (mass% × density × 10) / MW = (96 × 1.84 × 10) / 98.08 = 18.0 M
Converting Between Concentration Units
Mass percent can be converted to molarity if the solution density is known:
Molarity (M) = (mass% × density × 10) / MW
Where density is in g/mL and MW is the molar mass of the solute in g/mol.
To convert from molarity to mass percent:
mass% = (M × MW) / (density × 10)
Mass Percent vs. Other Concentration Units
- Mass percent (% w/w): Mass solute / total mass — temperature-independent; used in commercial reagents and food labeling
- Volume percent (% v/v): Volume solute / total volume — used for liquid-liquid mixtures (e.g., alcohol content in beverages)
- Mass/volume percent (% w/v): Mass solute (g) / volume solution (mL) × 100 — commonly used in biology labs (e.g., 1% agarose = 1 g per 100 mL)

Mass Percent in Food and Nutrition
Food labels typically report macronutrient content in grams per serving, which can be converted to mass percent of the total food weight. Percent daily values are based on a 2,000 kcal reference diet. In food science, water activity and moisture content are expressed as mass percent of total food weight.
